Celebrity Chef Pizzas For A Good Cause At Col’Cacchio

I was recently invited to sample the Liplekker Ribbetjie pizza by Celebrity Chef Chris Erasmus at Col’Cacchio Pizzeria in Foreshore.  For those who may not know, Chris Erasmus is the Head Chef at Pierneef à la Motte restaurant in Franchoek.

His Liplekker Ribbetjie is a béchamel base infused with roasted garlic and rosemary, topped with mozzarella, smoked and braised lamb soutribbetjie, caramelised onion, pears poached in port, fresh rocket and a sprinkling of rosemary salt.

After demonstrating how to prepare his mouthwatering pizza, Chris Erasmus formed part of the judging panel to select the Celebrity Chef winner for the month of August.  Other judges included Chefs, Jackie Cameron, Coco Reinarhz and surprise guest who is none other than the MasterChef judge – Benny Masekwameng.

All four judges unanimously agreed on the Liu Loren Pizza by Jessica Comninos.  He Liu Loren was inspired by her father’s signature dish, a Thai-inspired Perking duck 5 course meal which includes the fragrant flavours of garlic, ginger, chilli, lemongrass and coriander.

Chris Erasmus’ Liplekker Ribbetjie and Jessica Comninos’ Liu Loren pizzas will be sold at Col’Cacchio pizzerias over the months of July and August.  R5 per pizza sold will be donated the Children’s Hospital Trust, a fundraiser for the Red Cross War Memorial Children’s Hospital and Paediatric Healthcare in the Western Cape.
